As a pioneer of high-quality paper filters, Nakatsuka tried to find an answer to this question with paper. By studying the paper structure, he changed the drying methods of paper and eventually developed various paper filters. TH-2 filters are creped on both sides, but the crepe height is low. Since the surface area is slightly larger than single-sided creped paper, the area where dust particles can adhere is also larger. In the first half of the brewing, the flow is quite consistent as dust particles adhere less, while in the last half of the brewing, the flow rate is slowed down as the adhesion of dust particles increases. Thus, thanks to the fast flow in the first half and the slower flow in the second half, it is possible to increase the body and sweetness in the cup.
