The sanctuary farm is a project that was born from a goal of being ahead of market trends.
It is not easy to begin planning with plans to bring coffee from different regions of the world to generate a new profile of Brazilian coffee. The coffees that grown here are reflections of the obstinacy of Luiz Paulo and his partners. Today, in addition to the traditional Brazilian varieties (like yellow bourbon), the farm has more than 30 exotic varieties of coffee, differentiated cultivation practices (such as shade plantation) and innovative processes (New Flavors). The South Shrine is next to one of the most traditional farms in Carmo de Minas, Sisters Pereira, where it has its coffee benefited. Very carefully, the varieties planted there are monitored closely to be able to offer the best result within the climatic conditions of the region. In addition, Luiz Paulo himself makes sure to always taste the first samples of each of these coffees. For the next few years, Luiz Paulo has no doubt: “The goal is to always be at the forefront of the market and offer more and more quality!”
 
Luiz Paulo established his experimental farm, Fazenda Santuario Sul, in 2015 with the intention of bringing a global perspective to one of the more traditional growing regions in Brazil. The farm is planted with varieties that aren't typically found in Brazil but offer excellent cup quality in their native lands: Sudan Rume, SL28, Yirgacheffe, Laurina, Geisha and many others. This lot is 100% Geisha, processed as a natural, and sun-dried on raised beds.In Luiz Paulo's words: "The goal is to always be at the forefront of the market and offer more and more quality!" It certainly seems like he's doing just that. Even in a relatively short time, Fazenda Santuario Sul has become a perennial finalist in the Brazilian Cup of Excellence competition, most recently placing 4th in 2019.
